In celebration of Cinco de Mayo, HPM Insurance had a lunch-time fiesta with chips, guacamole, salsa and Margarita Pie. This recipe came from fellow-employee, Barbara Perkins (aka: Barkie). The recipe came from Barkie's personal recipe collection and has been a favorite for decades. Enjoy! 1 1/4 cups finely crushed pretzels 1/2 cup plus 2 Tblsp butter, melted 1/4 cup sugar 1 (14 oz) can sweetened condensed milk (NOT evaporated milk) 1/3 cup lime juice from concentrate 3 - 4 Tblsp. tequila 2 Tblsp Triple Sec or other orange-flavored liqueur 1 cup (1/2 pint) whipping cream, whipped (or Cool Whip) Additional whipped cream and pretzels for garnish Combine crumbs, butter and sugar. Press firmly on bottom and up side of 1 lightly-buttered, 9" pie plate. In a large mixing bowl, combine sweetened condensed milk, lime juice, tequila and Triple Sec; mix well. Fold in whipped cream. Pour into prepared crust. Freeze 4 hours or chill 2 hours. Garnish with additional whipped cream and pretzels, if desired. Enjoy!
