Nothing says summer like a cold drink with a little umbrella. In my house, you know it is summer when the mango martinis are being whipped up in the blender. As many friends have asked for this recipe, I thought it was worth sharing. Enjoy! Ingredients: 1/2 cup sugar 1/2 cup water 1 inch long piece of fresh ginger 2 mangoes (ripe) 1/2 cup vodka 21 ice cubes lime (optional) 1. Combine sugar, water and ginger in small sauce pan. Stir over medium heat until sugar dissolves. Simmer 5 minutes. Remove from heat and cover. Let steep for 1 hour. Strain ginger syrup and cool. 2. Puree mangoes in a blender. Pour into measuring cup and return 3/4 cup of puree to blender. Add 1/2 cup of the ginger syrup, vodka and ice to blender. Blend until smooth. 3. Pour into glass and garnish with lime and tiny umbrella. Enjoy!
