White Chocolate and Cranberry Cookies

I love this time of year because as the weather turns, I no longer feel the draw to go outside.  All I want to do is get cozy by reading a book by the fireplace with a latte and homemade treat.  One of my favorite homemade treats is a white chocolate and cranberry cookie.  These cookies are much easier to make than sugar cookies and fit right into the holiday spirit with hints of white and red.  They are also easy to make with kids as they can simply throw the ingredients in the bowl (and at each other if cooking with my boys.)  These cookies can be made in less than 20 minutes which will give you plenty of time to relax and enjoy them.  Happy Holidays!

  1. Preheat oven to 375.
  2. With an electric mixer, beat 2/3 cup softened butter and 2/3 cup brown sugar until light and fluffy.   Add two eggs and mix well.
  3. In a separate bowl, mix 1 1/2 cups old fashioned rolled oats, 1 1/2 cups flour, 1 tsp. baking soda and 1/2 tsp. salt. 
  4. Add to the butter mixture in three additions.  Add 6 oz. of dried cranberries and 2/3 cup of white chocolate chips.  Mix well.
  5. Drop spoonful onto baking sheet lined with parchment paper and bake for approximately 10 minutes.
  6. Cool and enjoy.

Recipe make approximately 2 dozen cookies.
